1 jar of your favourite Massaman Curry paste (I like Ayam)
1.3kg beef steaks (or chicken) (chuck steak is easy)
3 capsicums
1 broccoli
2 zucchinis
400g tinned tomato (not really needed, easy though!)
2 onions
2 carrots
2 beef stock cubes
1 tin lite coconut cream
1 sweet potato or potato
Cut / dice / slice your vegetables however you like. I like thin slices that go nice and soft! Keep you potato chunkier if you want it to stay solid
Cut your beef or chicken in cubes (for quicker cooking)
Add the stock cubes to your slow cooker, along with your meat and onion
Pour in your curry paste, tinned tomato and coconut cream
Add your vegetables to the top (potato last)
Wrinse your jars with water, pouring that water over your veggies (~100mL, you don't want it too watery)
Leave to cook for 6-8 hours. Take the lid off and continue to cook to reduce the curry (AKA make it thicker!) until happy with the consistency!
1 jar Tikka Masala Sauce (Patak)
1kg chicken breast (or more)
2 capsicums
1 broccoli
2 zucchinis
400g tinned tomato
2-3 onions (preference)
Contains over 25 serves of veggies and
In a large saucepan / pot, spray some olive oil
Brown the onion in the oil, while cooking chop your veggies and chicken
Throw veggies into pot (hard to soft), cook until soft-ish (~10-15mins)
Add sauce (start with less and add to preference) and chicken, simmer on medium heat for ~15 mins until chicken is cooked and veggies are tender.
Divide and serve with some rice, couscous, quinoa or pasta.....
